Tested this Chicken Jambalaya recipe from the The Shadows-on-the-Teche cookbook. It’s from a historic home in New Iberia, LA. The cookbook is from 1984, but this recipe dates back to the 1830s.
Everything turned out good my only hiccup was I added too much water, so the rice ended up a little mushy.

No one can tell me that washing rice is new to cookery! This looks like it would be good with some roasted vegetables, kinda looks like ‘creamed’ chicken. Would make for a good casserole base if you tossed some veggies in and added a topper like crumbled saltines or a mix of breadcrumbs and Parmesan. Love seeing the results of these old recipe tests!
