As title mentions, I was wondering if anyone has tried making 삼겹살 for kbbq using the thicker just pork belly slices that Costco offers. There aren’t any Asian butchers or stores near me, so I’m not sure if there’s truly any difference. Just when I’ve bought pork belly from other stores, it’s never really tasted the same as those I’ve had in Korea or in California.

Has anyone tried making kbbq out of these? Would you recommend just grilling them straight up or prepping them in some way? (Like soaking them, thinly slicing them, etc.)

  1. Basically the same, just freeze it until the meat is stiff so it’s easier to slice or cut for grilling.

    Oh yeah these are fucking great. I usually freeze them slightly prior to cutting. They are a bit thick for KBBQ so you should either cut them into thirds or fourths. I also do waffle cuts sometimes!

  3. yes, one of best source for it. Some costco butchers might cut them up for BBQ if you ask nicely.

    It’s probably the best option I have in my area. Costco Porkbelly is perfect. If you can get the unsliced slab, you can also slice it up to your preference. The pre-sliced version is perfect thickness if a bit thin IMO

  5. Some places cut them thin enough, others leave them in large chunks. The chunks are great to cube up and make burnt ends out of, but are hard to cut for grilling. Ask them, and they’ll probably cut them thinner for you.

    I love these for kbbq! What i do is sear them as is on each side then pull them off the heat and slice them into bite size pieces (cooked meat is easier to cut than raw) and throw em back in the pan until desired doneness.

    I buy these all the time and they’re perfect for making bossam and sooyuk. When you wanna do kbbq and can’t get them sliced thinner in the store for whatever reason, just freeze it for couple hours and it should be easier to cut into thinner strips. Check the packets before buying carefully because ive seen some packages where it was just all slabs of white fat with no meat attached to it.

    Yes yes yes! These are something not many people know about! I highly recommend buying these for samgyupsal. Definitely thicker but you can always cut em.

    Another tip is if you want to buy short ribs for LA galbi recipe, go to Mexican markets or vallartas. They usually have better deals than Korean markets

  10. I use these all the time and prefer them to pre-sliced. I cook them, unsliced, in the air fryer (regular oven would work just as well). I slice them after they’re cooked; nice crust on the outside, super juicy inside.
