I will try this using bacon grease to fry in and bacon bits mixed in to the sour cream, so that I can stop missing potato skins with all these same accoutrements!
Wouldn't it be better to use avocado oil or coconut oil. Good olive oil would burn thereby LOSING all it's benefit and gaining carcinogen…….I use olive for ALL raw foods (dressings, etc) but esp for frying (even more than baking at an even temp) when the temp can fluctuate, I usually stay away from olive. Am I wrong?

Isn't high heat frying in olive oil bad!? Like at least use something safer like avacado oil.

These are amazing! I kept the oil, avocado and olive, at 375°, and strained it afterwards. So delicious and easy.
