Makes 2 burgers:
1-pound ground beef, 80/20
½ teaspoon salt
¼ – ½ teaspoon black pepper
2-4 slices cheddar cheese
2 brioche buns
Sliced onions, tomatoes, and pickles
For the sauce:
½ cup mayonnaise
¼ cup sour cream
1-2 tablespoons ketchup
1 tablespoon Dijon mustard
Black pepper, to taste
Combine all of the sauce ingredients in a bowl and whisk well to combine. Set aside.
Combine ground beef with salt and pepper and mix until just combined taking care not to knead and compact.
Divide into 2 portions and form into 5-inch round patties or slightly larger than the diameter of the bun. Press the center of the patty down to create an indentation to prevent puffing up when grilling.
Heat a cast iron pan over medium-high heat. Lightly grease the pan with some butter.
Cook 3-5 minutes on each side.
Top with cheese slices during the last few minutes of cooking to melt the cheese.
Toast the buns about 1 minute.
Place a tablespoon of the sauce over the bottom bun, top with pickles, onion slices, and tomato. Place the cheeseburger over the top and then the top bun.
Serve with some Greek fries.

Hi everyone welcome back to dimitra’s dishes today I’m gonna be teaching you how to make the perfect the most delicious hamburgers these are the hamburgers that we sold at our cafe when we used to own it before we sold it when we introduced these these sold out in 45
Minutes I mean it’s incredible the recipe is so simple it’s been asked for for like it’s been requested on facebook on Instagram in person on the channel so I am bringing it to you today you’re gonna be so shocked at how simple it is you might already have some of these
Ingredients on hand let’s go over them and then we’re gonna get started so we need some really good quality fresh ground beef this is an 80/20 mixture so 80 lean beef 80% lean beef and 20% fat the seasoning for it is so simple just salt and black pepper whatever cheese
You like I’m making a cheeseburger so I’m using some cheddar cheese and these are slices that are really good I have some chopped up tomatoes onions and pickles and then the dressing that’s going on there or the sauce is super simple it’s a little bit of mayonnaise
Some sour cream ketchup mustard and some black pepper and of course you’re gonna need some good-quality brioche hamburgers I have two pounds of ground beef here and all I added to it was two teaspoons of salt two heaping teaspoons of salt and then two teaspoons of ground black pepper
And then I’m just gonna mix this without compressing it I’m not gonna knead it in like some people have the tendency to knead hamburger meat to kind of get all the spices distributed but if you do that you compact the burger and then you won’t have a nice light juicy airy
Burger so you want to distribute the spices evenly but without compressing it if that makes sense so I’ve tested this recipe many times before we served it at the restaurant I tried to add lots of flavors in there like onions and garlic but each time I
Tested it it never came out as good as with just simple salt and pepper I like to add the vegetables inside the burger once it’s cooked rather than inside the patty that’s it so I’m gonna make 1/2 pound patties you can make them whatever size you like so I’m gonna cut this into
Four pieces you want to you can weigh them and they’re gonna be eight ounces each but I’m just going to do it by just looking and kind of seeing so they look pretty equal to me I’m just gonna form four patties and then I have my cast-iron pan
Heating up here on some medium-high heat and I really prefer I’ve done this in the grill and I’ve done it on cast-iron pans and it comes out the best on a cast-iron pan of course if you’re making it for a crowd I just just do it on the
Grill just keep an eye on it try not to overcook them because I’m the grill they tend to dry out faster than they do on these grill pans but if you’re making just a few then take out the cast-iron pan and you’ll be happy you did because
It comes out super super juicy on there so the hamburger buns that I’m using measure four inches in diameter so I made it five inches in diameter because after it cooks it is gonna shrink a little bit I’m gonna press down the center a little bit to avoid it from
Getting that bump that it’s that burgers usually get I’m gonna cook mine about medium well so it’s gonna be three minutes on each side so while the patty is cooking I’m gonna make the sauce which is super simple the mayo and the sour cream are already in the bowl now
I’m gonna spice it up with a little bit of Dijon mustard you can add whatever you like to this and I’m also gonna add some ketchup for a little bit of sweetness if you wanted to you can do BBQ sauce instead and everything is totally customizable like I said a
Little bit of black pepper I’m gonna mix this all up and give it a taste and to me that tastes perfect if you wanted more mustard go ahead and add more mustard if you wanted a little spicy you can add some sriracha sauce but this is perfect for my liking
I’m just gonna flip the burger over beautiful I’m gonna cook it three more minutes on this side let me put the cheese so the cheese will start melting I’ll put two slices because I like it super cheesy and then it’s gonna be ready in no time till my burger is
Almost ready I also like to make sure the hamburger buns are nicely toasted so about the last 30 seconds to a minute I’ll toast the hamburger buns as well and that will make it so that way they don’t get soggy once the burger and the sauce and everything is put on there so
The way I like to dress this is I like to put a nice heaping tablespoon of the burger sauce I’ll put some onions you can put some greens that you like if you have some lettuce or baby lettuce that’s going to be perfect I chopped up some

The day that you’re making them because there’s something about leaving them in the fridge overnight it’ll still be good the next day but after that I don’t recommend that you do that season them the day you’re serving them maximum the night before because I feel like the
Salt does something to the meat and kind of dries it out you want maximum the most max the most juiciest burger ever that’s what you want to serve and this my friends is it it’s delicious I’m gonna have a bite of it with the pickle and the cheese you can definitely
