
I have done keto on and off for years and this is genuinely one of the best recipes I’ve tried!
Make the tapenade: equal parts feta cheese, diced green olives, and quartered cherry tomatoes (plus salt n pepper, pinch oregano).
Take some flat chicken breast and season both sides with salt n pepper and oregano.
Chop up some shallots and garlic (you could sub onion for shallots).
Use an oven proof skillet. Preheat to 400. On stovetop sear chicken for 3 minutes on one side in some olive or avocado oil. Then flip the chicken, throw in the shallot + garlic, and put in oven for 5-7 mins.
Spoon olive tapenade mixture over chicken and put back in oven for a few minutes.
I served with a kale salad with almond slivers and tangy lemon dressing! It’s a green chef recipe. Best one I’ve tried from them yet.
