MUSHROOM RISOTTO
GROCERY LIST FOR 2 PEOPLE:
– RISOTTO RICE
– GARLIC/ITALIAN PARSLEY MIX
– MUSHROOMS
– VEGETABLE OR CHICKEN BROTH
– OLIVE OIL
– SALT
– BUTTER
– PARMIGIANO CHEESE
First, we slice the mushrooms and cook them in a pan with
olive oil and minced garlic/Italian parsley for about 10 minutes
on low/medium geat with the lid on. We add a pinch of salt and
our risotto ice (usually a glass jar of rice every two people).
we cook it for about two minutes. At this point, we start adding
the broth little by little. The secret to a good risotto is to
add a little amount of broth whenever it dries out and mix it
every minute. We cook for about 15 minutes. After that we turn
it off and we ass half a butter stick and grated parmigiano cheese
(if you like it) and it’s ready!
