This is Hungarian goulash. Chuck roast, potato, carrot and (a lot) paprika are the main ingredients. I add (a lot) of onions and some tomato paste. Worcestershire, salt pepper etc. Yesterday I started cutting 3 lbs of onions at 3 am and it was worth the effort. They take hours to get that Maillard reaction going right. Same with the carrots. Finally when you add it together, low and slow all day and the beef falls apart in your mouth. The spoon should stand up and member to stir!
