Tomato soup flavoured with fresh basil leaves and served with homemade bread rolls. Watch this video to find out how to make this recipe.
TOMATO BASIL SOUP
Ingredients
8 medium tomatoes
6-8 basil leaves
1 tablespoon olive oil
1 bay leaf
8-10 black peppercorns
1 large onion, roughly chopped
1 medium carrot, cut into roundels
5-6 garlic cloves
Salt to taste
1 teaspoon castor sugar
Crushed black peppercorns to taste + for sprinkling
Method
1. Heat olive oil in a deep non-stick pan. Add bay leaf and peppercorns and sauté till fragrant.
2. Add onion and carrot and sauté for 10 seconds. Add garlic, mix, cover and cook for 3-4 minutes.
3. Discard the eye of tomatoes, roughly chop and add to pan alongwith salt, mix and cook on high heat for 3-4 minutes.
4. Add 4 cups water, mix, cover and cook for 10-12 minutes. Transfer in a bowl.
5. Discard the bay leaf from the cooked tomato mixture and blend using a hand blender to make a smooth mixture.
6. Strain the mixture into the same pan and place on heat. Add ½ cup water, torn basil leaves and mix.
7. Add castor sugar and crushed peppercorns, reduce heat, cover and cook for 5-7 minutes.
8. Sprinkle some crushed peppercorns on top and serve hot with homemade bread rolls.
HOMEMADE BREAD ROLLS
Ingredients
2 cups + 2 teaspoons refined flour + for dusting
2 teaspoons fresh yeast
2 teaspoons castor sugar
2 teaspoons milk powder
½ teaspoon salt
1 tablespoon + 1 teaspoon butter + for basting
Oil for greasing
Milk for brushing
Dried mixed herbs for sprinkling
Method
1. Take yeast in a bowl. Add castor sugar and 2-3 tablespoons warm water, mix and set aside for 5 minutes to activate.
2. Take flour in another bowl. Make a cavity in the center, add activated yeast, milk powder and salt and mix. Add some water and knead into a soft dough.
3. Add butter and knead again. Cover with damp muslin cloth and set aside to prove for 10-15 minutes.
4. Grease a baking tray with some oil.
5. Dust the worktop with some flour, place the dough and knock back to release excess air.
6. Divide the dough into equal portions, shape into balls and place on the greased baking tray.
7. Cover with damp muslin cloth and set aside to prove for 10-15 minutes.
8. Preheat oven to 180° C.
9. Brush some milk on top of proven balls and sprinkle some dried mixed herbs. Put the tray into the preheated oven and bake for 15-20 minutes, basting with some butter.
10. Serve hot with tomato basil soup.
