Recipe:
2 cups water
75g Japanese sweet potato
18g red miso paste
1g dried wakame
2 eggs
1/2 tsp dashi powder (Japanese soup stock)
Chopped green onions
You can use regular chicken stock if you can’t find dashi, but you can find dashi at any Asian market and most food stores, same with wakame (seaweed)
Start by soaking your wakame in cold water. I just chop the sweet potatoes and boil them in the miso/dashi stock for about 15 mins. Then you can drop in your wakame and eggs and cover the lid. Turn off the heat but leave it on the stove for another 5 mins to let the eggs cook a bit. Then top with your green onions.
