In this video, for the first Sunday of the month, I’m getting ready for the Super Bowl! A lot of people like to host parties and get all their family and friends together to watch the NFL championship game. And you can’t have a party without good food, right? Last year for the Super Bowl, I made a recipe for baked buffalo cauliflower and the year before that, I made vegetarian chili. This year, I have a video on how to make Potato Skins! These loaded baked potato skins are the perfect game day treat filled with lots of flavor. Comment down below which team you’re rooting for in Super Bowl LVIII! Hi everyone my name is Leah and welcome to the kitchen the Super Bowl is coming up next week so in today’s video I’m going to be making potato skins potato skins are a great game day appetizer and dish to share while you’re watching the game so let’s get Started for this recipe you will need some rusted potatoes bacon olive oil I’m using a shredded Mexican style blend of cheeses black pepper garlic powder some broccoli flues scallion and some sour cream Begin by thoroughly washing and scrubbing six russet potatoes next use a fork to pierce some

Holes into the skin of each Potato drizzle some olive oil over each potato and rub the oil all over the Skins bake the potatoes in the oven at 425° F for 1 hour place a few strips of bacon into a cold frying pan with the stove on medium low allow the bacon to cook flipping it periodically Cook the bacon to your desired crispiness and then transfer to a paper towel aligned plate to drain and reserve the remaining baking grease in the Pan remove the lid from a large pot of boiling water and add 1 cup of broccoli Fluor Rays push the broccoli down to ensure it is all submerged and cook for 3 minutes drain the broccoli and then run them under cold water to shock them and prevent the broccoli from cooking

Further chop the upper buds off the shocked broccoli flues and set Aside crumble and cut the drained and cooled bacon into small 1/2 in size Pieces Remove the potatoes from the oven when they are fork tender and allow them to cool chop a bunch of fresh scallions into small pieces cut the baked potatoes in half being sure to leave the outer potato skin intact score the cut potato halves with a spoon

Leaving a/4 of an inch thick of Flesh attached to the skin then spoon and scoop out the insides of the Potatoes brush the scooped potatoes when seven the reserved bacon grease season with some black pepper and garlic powder to taste pop the potato halves in the oven again for 15 minutes to allow the potato skins to crisp and then remove the potato skins from the oven Fill each potato skin with a spoonful of the chopped broccoli buds next sprinkle on the shredded cheese about a tablespoon size full per potato then sprinkle a few pieces of the crumbled bacon on Top Bake the filled potato skins in the oven at 425° F for 5 to 7 minutes and then remove the potato skins from the oven Serve with a dollop of sour cream and a handful of fresh chopped scallions we have finished making these potato skins they’re best to be enjoyed warm with a dollop of sour cream and a sprinkling of scallions if you’re interested in my recipe to learn how to
