“Inspired” because it’s with Parmigiano-Reggiano and pancetta but it’s pretty damn tasty!

Compared to many attempts posted on this sub, I’d say this is commendable!

No need for inspired, pancetta and parmigiano are acceptable substitutes. Pancetta if you can’t find, or like the taste of guanciale. Parmigiano if you find pecorino to be too salty.
