
Craving Hawaiian food on keto?
I’m no cook and made this up but it was ono and worthy sharing.
Cauliflower Rice (I added garlic, a splash of heavy cream,squeeze of lemon and a pat of butter)
I tenderized and dredged my chicken in Victorias Keto New Standard Blend 2.0, then in egg, then in chicharrones I beat silly. Fried those up real quick, cut em into slices and laid on my bed of cauliflower rice. (Almond flour works too)
Start caramelizing 1/4 of an onion.
For the brown gravy, I improvised from a recipe from the Healthy Little Peach.
2 cups beef stocks
Three crushed garlic cloves
2 Tbsp butter
1 Tsp Xantham gum
Salt and pepper
Bring the beef stock, garlic and butter to a light boil and reduce to simmer. Add salt, pepper and whatever else the voice in your head tells you to before slowly whisking in xantham gum. Then I put my caramelized onions in there and left on low heat to thicken. Stir it up, little darlin’, stiiiiiiiiir it up… like a lot.
Make some sunny side eggs and chop green onion.
Layer it up! Bed of garlic cauliflower rice, chicken katsu, sunny side up eggs and brown gravy. Forgot the Kim chee in the photo but it’s a must have with this dish!
