– 1 cup dry green lentils
– 4 cups water
– ¾ tsp. kosher salt
– 4 cups chopped kale
– ½ cup DeLallo Julienne Cut Sun-Dried Tomatoes
– 4 oz. feta cheese
– 1 tsp. lemon zest + 2 Tbsp. fresh lemon juice
– 3 Tbsp. finely chopped fresh parsley
– 2 Tbsp. finely chopped fresh dill
– 1 Tbsp. DeLallo Modena Balsamic Glaze (or 2 pitted and chopped Medjool dates)
🔪 Instructions:
1. Sauté shallots and garlic in 1 Tbsp. olive oil; add coriander.
2. Add lentils, water, and salt; simmer until tender.
3. Combine feta, lemon zest, lemon juice, parsley, dill, and ¼ cup olive oil for marinated feta.
