I broke down a whole chicken first by removing the wingtips wishbone and the backbone then i went ahead and broke it down into quarter legs and split the breast time to season with salt pepper garlic onion powder cumin smoked paprika and cayenne make sure to season all sides and up underneath that skin
Break out my trusty meter made meter block and insert it into the thickest parts of the chicken we’re setting up for 275 with mesquite wood chunks now we’re going to make our sauce ketchup red wine vinegar honey dijon mustard brown sugar chipotle anko chili powder and salt you’re going
To simmer for six to eight minutes and then let it cool our chicken is approaching 150 degrees and we’re going to go ahead and sauce our bird let that sit all the way until 165 this is going to add tremendous flavor and color the whole recipe is on my website link in bio
