
Still craving Hawaiian food!
“Skinny Rice” (Konyakku/Shirataki Noodles, riced)
I bought a variety pack of Shirataki noodles that included a rice packet. (It’s just the noodles cut up smaller)
1 pack (270g, 4 carbs in the entire pack)
1/4 onion-diced
2 cloves of garlic-minced
4 slices of bacon- cooked and chopped
1 green onion
2 eggs
1 Tbsp oyster sauce
Salt and pepper to taste
Rinse the noodles really well in a fine strainer and shake excess water off.
In a completely dry pan, lightly fry the “rice” in a dry pan (just to get the moisture out-no oil!). Move to a bowl and set aside.
Place butter in a pan over medium heat and saute onion until translucent, add garlic and cook until fragrant. Add back in the “rice”. Add bacon, oyster sauce and season to taste before pushing to one side of the pan.
Scramble two eggs in the open space in the pan. When almost firm, stir in the “rice”. Top with chopped green onion.
