11:23 Happy Valentine’s Day
I’m Charlie from cooking secs for men.com today we’re doing another International collab this time Valentine’s Day around the world great YouTube chefs from different countries show us their favorite ways to express love through cooking and preparing their favorite Valentine’s recipes # food of love their information will be in the
Description box below please make sure you check out their videos on their channels so for my entry into # food of love I’m going to be preparing seared lamb chops a little loin chops going to have some roasted baby potatoes and some green beans so I hope
You enjoy this Valentine’s meal # food of [Applause] love all right to get started um we’ve got our oven heating at 4:25 that is going to be for The Roasted baby potatoes um we’re going to marinate the lamb tops and I’ve already done this but you can um blanch the green beans um and
Then uh for about like a minute or two and then stick them in an ice bath so what that does is it it softens them slightly but it makes sure they have this great green color that will come in when we end up cooking them on the stove
Top so green beans on the stove top lamp chops on the stove top potatoes in the oven all right so the first thing we’re do cuz it’ll take the longest is marinate the lamp chops got my little ruler here and as you can see this is just a tad over an
Inch this one is right on an inch so they’re about an inch thick so first thing I’m going to do is salt them pretty good um you can marinate them I think I like steaks salt both sides all right all right now you can do marinade
Many different ways you can let it sit out you can put it in the fridge you can sit it for many hours you can do a short one um for this particular recipe all we’re going to do is um put them in a bag plastic bag you put them in a a a
Sealable plastic container okay so I have five um my wife is a dainty eater she only eats two but of course I’m not so this is two or three chopped uh garlic gloves we’re going to go right in all right this is some chopped Rosemary and that’ll go in the salt pepper garlic
Onion that and those got salt on it and then the rest of the marinade is just plain old Olive o Olive in with the chops so you definitely don’t want to marinate them too long cuz then eventually will the acid will um break down the chops but you want to get
Them a little covered and what this will do also is allow you to um not have to put as much oil in the pan because your chop already have it all seal this roll it around to get the Rosemary and the garlic and the onions and salt all
Together we’re going to set this aside and then we’ll do our we’re doing little baby potatoes little baby potatoes simple all we’re going to do is uh about a tablespoon or so of olive oil want too much this is salt pepper garlic onion that’s going to go on and I’ve got roasting pan
Here just roll these around it’s going to go right into the pan and as much as possible you don’t want them to touch uh they’ll cook stronger and the quicker if they’re not touching and these are going to cook for about 20 to 25 minutes these will take the longest
So these will go in first all right and already talked about the green beans you stick them in a pot of boiling water for about a minute they get this bright green color you fish them out stick them in a ice bath it cools them so these are going to be at room
Temperature when you cook them and they’ll cook quickly and they’ll keep their flavor and they will also look great on a plate all right so the first thing we’re going to do is we’re going to stick our potatoes into the oven and they’re going to cook for about 20 25
Minutes um the more you Crow the plate the longer it’ll take the less should be fine all right There we go Alexa set a timer for 25 minutes 25 minutes starting now all right Alexa is great all right so the next we’re going is move over to the stove top and we’re going to uh start on the um lamb chops and we’re going to do
The green beans all right the first thing we’re going to do is these are SED almonds we’re going to put in the pan put a little teeny bit of butter in there and really need it and all these are going to do is toast for about a
Minute or two just want to get them so they’ve got a little bit of both color and they’ve give off a little bit of the scent all right so nice and getting browned we’re going to take them off the fire set them aside going to move the other pan over here
I’m going to put the chops in the cast iron pan let them the sear for that 3 4 minutes untouched I’m going to let them go for about 3 4 minutes and I’m going to turn the pan for the beans on just to warm it I’m going to put the beans in
When I flip the chops make sure you have an instant reath thermometer so when we test the meat we’ll test it when we turn it over you really want to pull it around you want medium rare around 135 and there’s a lot of debate medium medium rare probably one it’s between
Medium rare and medium but take it out between 135 and 140 it’ll continue to cook all right it’s been about 4 minutes so I’m going to fli them take a look here we go see the C go yeah I got a ways to go now the chops
Are on the second side I’m going to put in the green beans turn the heat up a little bit a little B the butter these are the ones Blan you don’t have to Blan them I’ll cook this fine need a little salt pepper garlic onion actually going to cover the
Beans we’ll take them off the heat and add the almonds once we’re on the second part or we finish up on the ltop all right so I’m going to add the uh almonds to the beans I’m going turn the heat off and I’m going to cover them but I’m
Going to move them over here off the heat we’ll turn our attention put a little lamby CH I already took one off because of all right that one’s done almost but the size will matter this one was also where the heat the pan ready ready last one need a little more time
All right be back in just a minute put everything together all right I’m going to go ahead and plate the uh chops the potatoes and the green beans put on the nice white plate we’ll put two chops on each little sprig of rary and nicely roasted potatoes colorful couple of
Each all right and see our green beans are nicely steaming smell the Almonds here was our Valentine’s Day dinner pan seared pork chops excuse me pan seared lamb chops green beans almondine toasted almonds and some roasted potatoes in the oven uh comes together in 20 25 minutes um the chops the closer they are to the same size the
Even more even Little Cook as we saw I had to take a couple out early um but I’m going to wait for my wife and have this with her um so I hope you enjoyed this please check out everyone else’s video here on #f food of love and our
International collaborative we got some new people this year and some returning Superstars that um we be showing some of their great recipes so appreciate everyone’s support please like And subscribe and as always thanks for [Applause] watching

Love lamb, keep the potatoes, and pass me the beans! (I love potatoes, but I save that carb room for pizza!). Nice video.

Hi, Charlie!
This Valentine's Day dinner looks amazing! I'm sure the marinade made the chops super delicious, especially with the rosemary.
Like you said, blanching the green beans made sure they retained their beautiful color. Everything turned out great–the almonds were a nice finishing touch.
