ZUCCHINI ALLA PIZZAIOLA
INGREDIENTS
Fresh zucchini (Nick used 4 small Lebanese zucchini and 1 large Blackjack zucchini)
Salt
Olive oil
3/4 cup water
1 cup of grated hard cheese (Pecorino Romano, Grana Padano or Parmesan)
4 fresh tomatoes (or 400g canned tomatoes)
Small bunch continental parsley
3 cloves garlic
4-5 basil leaves
Pinch of dried oregano
Salt
Pepper
Wash and slice the zucchini in 4cm lengths. Drizzle olive oil in an oven dish. Place the zucchinis in the tray and lightly salt.
In a large bowl, add in the chopped tomatoes, parsley, garlic, oregano, basil, salt and pepper. Mix well.
Spread tomato mix over zucchinis. Sprinkle with grated cheese. Drizzle each zucchini round with olive oil. Pour the water around the zucchini rounds.
Place in hot oven at 200 degrees Celsius for approx. 45 mins.
Great served as a side dish to meat, chicken or fish. Nick loves to eat it on toast in the morning for breakfast!

Place in oven at 200 degrees Celsius for 45 minutes Mmm they are delicious Bewdiful
