Today I’m making homemade old-fashioned low-carb potato salad without any potatoes that’s right I’m replacing the potatoes with cauliflower I know you’re cringing and seeing there’s no way that’s going to taste like potato salad but trust me when we’re done you’ll be very surprised at how much it tastes

Like potato salad without all the excess carbohydrates so let’s get started I started off with one medium head of cauliflower that I cut all the florets off of and left them in Fairly large pieces for now so they do not overcook I will cut them into smaller pieces later

Then they go into boiling salted water for five to seven minutes or until fork tender now remove the cauliflower and drain all the excess water for a full printable copy of this recipe and many more visit thewolfpit.com now take a knife and roughly chop up the cauliflower into small pieces until it

No longer resembles cauliflower now I’m adding hard-boiled eggs that I’ve chopped up chopped red onion chopped celery bell pepper mayonnaise and of course being a southern boy and using the best I’m using Dukes and for a little bit of Tang and color yellow mustard now give it all a good mix until

Everything’s well combined I don’t know about you but the more I mixed the more this started looking like potato salad now add some salt and pepper to taste give it a good mix cover and refrigerate at least a couple hours before serving overnight is even better foreign so there you have it homemade

Old-fashioned no potato salad I am a potato salad fanatic I can eat it as a meal on its own and there was nobody more skeptical about the cauliflower in this than me if this was served to me in a restaurant a picnic or wherever I would have eaten

It and never questioned whether it was potato salad or not that’s how much it really tastes and actually feels like potato salad when you’re eating it thank you all very much for watching I hope you give this a try please don’t forget to like this video And subscribe

And I’ll see you next time foreign

  1. Totally not buying that this is indistinguishable from normal potato salad. I mean it's cauliflower! That doesn't taste like potatoes, but will try one day and give a comment good or bad when i do.

  2. Gotta Love Dukes!! For those worried about the nutrients you'll lose by boiling can steam the cauliflower in salted water and preserve 50% more of the vitamins and nutients that make cauliflower an AWESOME substitution!

  3. NO…. JUST NO!
You need to get some Drano and clean your palate, buddy. Signed: your conscious.

  4. Made this tonight with no sugar pickle cubes. It was awesome!!! Thank you for the recipe, it tastes like potato salad! At least the kind I can have!!!
