Crock Pot Bourbon Chicken

    I really enjoyed making this one. Tastes a lot like the one at the Panda Express. I like for my chicken to be kinda shredded so I used thighs, tastes great on rice!

    **Ingredients**

    * 3 lb Chicken Thighs, Boneless, skinless
    * 1 Cup Brown Sugar
    * 1 Cup Soy Sauce
    * ⅓ Cup Bourbon Whisky
    * 2 Tablespoons Apple Cider Vinegar
    * ½ teaspoon Ground Ginger
    * 1 Tablespoon Honey
    * ½ teaspoon Red Pepper Flakes
    * 4 ea Garlic Cloves, minced
    * 3 Tablespoons Cornstarch
    * 2 Tablespoons Water
    * ¼ Cup Green Onions, chopped

    **Instructions**

    1. Place the chicken thighs (well trimmed) into the slow cooker.
    2. In a medium mixing bowl, add the remaining ingredients (except the cornstarch, water and green onions). Mix together with a whisk.
    3. Pour over the top of the chicken thighs. Cover and cook on high for 4 hours, or low for 6 hours.
    4. Remove the chicken thighs to a plate and roughly chop them.
    5. Add the cornstarch and water to a mixing bowl and mix until cornstarch is dissolved.
    6. Pour into the sauce in the crock pot and mix with a whisk.
    7. Add the chicken back to the sauce, stir to combine then cover again.
    8. Allow to come back to bubbling then turn off the crock pot. Sprinkle with chopped green onions and serve over rice.
