🥕 **Ingredients:**
– 1 1/2 lbs peeled and chopped carrots
– 1 can (15 oz) chickpeas, drained and rinsed
– 2 tbsp avocado oil (or favorite neutral oil)
– 3 tsp za’atar
– 1 tsp garlic powder
– 1/4 cup finely minced cilantro
– 1 small clove of grated garlic
– Zest and juice of 1 lemon
– 1 tsp white miso paste
– 1/2 cup plant-based unsweetened yogurt
– 2-3 tsp maple syrup (adjust to taste)
– Salt & pepper to taste
👩🍳 **Instructions:**
1. Preheat oven to 425F.
2. Toss carrots with 1 tbsp oil, 2 tsp za’atar, and salt. Roast on top rack.
3. Coat chickpeas with remaining oil, za’atar, garlic powder, salt, and pepper. Roast on bottom rack, tossing halfway.
4. Mix herbs, grated garlic, half lemon zest, juice, miso, optional maple syrup, and salt. Fold in yogurt. Set aside.
5. Toss chickpeas and carrots with remaining lemon zest, juice, and maple syrup.
6. Serve over rice with the yogurt sauce.
