Beef tagine with caramelized apples
Ingredients:
For the meat
600g (1 lb) beef shank
2 onions, peeled and diced
3 garlic cloves, peeled and grated
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon turmeric
1/2 teaspoon black pepper
1/2 teaspoon ground cinnamon
1 tablespoon parsley, chopped
2 cinnamon sticks
3 tablespoons vegetable oil
3 tablespoons olive oil
A little saffron
600ml (3 cups) boiling water
For the apples
5 yellow apples, peeled and quartered
Water for boiling
1/4 teaspoon salt
2 cinnamon sticks
2 tablespoons butter
4 tablespoons sugar
1 teaspoon ground cinnamon
100ml (½ cup) reserved apple boiling water
Steps
Step 1: Preparing the beef
1- In the pressure cooker, add the beef, onions, garlic, spices, parsley, cinnamon sticks, vegetable oil and olive oil, then mix everything.
2- Place the pot on medium heat, stirring occasionally, until the meat is browned
on all sides.
3- Add the saffron threads and water, close the pot, then cook for 45 minutes.
4- Open the pot and let the sauce thicken slightly.
Step 2: Preparing the caramelized apples
Note: When cutting apples, put them directly in lemon juice to avoid them
oxidizing.
1- In a pot, add the water, apple pieces, salt and cinnamon sticks, then cook for 10
minutes.
2- Drain the apples from the water and set them aside. Reserve the boiling water.
3- In a hot pan, add the butter and sugar and cook over medium heat until the
sugar dissolves.
4- Add the ground cinnamon and apple boiling water and mix everything well.
5- Add the boiled apple pieces and cook until they caramelize (about 5 minutes).
Step 3: Serve the tagine
1- Place the meat and sauce in a plate.
2- Add the caramelized apples. Decorate a little ground cinnamon and sesame
seeds, then serve with Moroccan bread.
