No fancy stuff, just used a regular ass pan.

No oil, rendered the fat cap first and seared until it looked finished. Flipped both sides only once at the end for about 30 seconds.

Not too shabby eh?

And yeah I like my eggs crispy

    I know it’s harsh, and don’t get me wrong, the inside temp looks close to perfect, but I’m honestly more of a stickler for a good sear than I personally care about the doneness

    Could use a torch to improve the crust, but the lack of gray banding is def more important imo. 10/10 would eat and enjoy that (were it properly salted ahead of time).
