
After spending many hours watching BBQ videos on YouTube, I was somewhat intimidated about the process, however I think the smoking God’s would be proud of my effort.
What went well: Meat selection. This Choice brisket from Costco had nice marbling and very little fat. And the bark…OMG the bark!
What can I improve on: My trimming sucks! Definitely need more practice. Fire management too. However, it was 23 degrees, but this is an art and I definitely need more practice while learning this smoker.
Onwardand upward! What should I smoke next?

On cold days, I like to use a welding blanket on top to insulate my offset. It saves a bunch on wood consumption.
I cant believe people are using their smokers in the front yard! Im scared someone will roll up and steal my precious meat while im not looking lol
