Cotechino or Pork sausage rolls are traditionally eaten on New Years Eve in Italy with lentils .It is also good any day of the year. It can be served with any vegetables and can be enjoyed hot or cold. I added crispy fried chicken skin to sausage mixture for extra flavours, but if it’s not available smoked bacon would be great for this recipe.
Ingredients
300 gm pork sausages; 1 onion ; 1 celery stick ; 1 carrot; 2 tablespoons olive oil or use chicken oil; 50 gm bread crumbs; 1 egg; 1/4 teaspoon ground star anise; 2 tablespoons finely chopped fresh parsley or fresh sage; Salt and pepper to taste

Bake in preheated oven 200 C for 40 minutes. Leave to rest for about 5 to 10 minutes before removing the aluminium foil.
