I like to buy the 3 lb bag of peeled garlic at Sam’s, roast it all up. Puree, freeze in silicone trays and then place in airtight container. Anytime I need roasted garlic for anything it’s so much easier to grab a cube or two from the freezer.

    I raw dog it into my freezer. No roasting it.

    I Jar it in olive oil and keep it in the fridge, and you get the leftover garlic oil which matures nicely over time
