avocado chicken salad on whole wheat toast, w/ some dill pickle chunks! i recommend using wider bread slices, it was falling apart but cooperated enough for a picture.

for the chicken i poached 110g chicken breast in chicken stock, then shredded it, any chicken would be good though. for one person, i used 1/2 avocado, 3tbsp yogurt, spiced to preference. i love dill so it’s mainly dill flavored

    I like Dave’s Killer 21 Grain wheat bread. Holds together like crazy when toasted. A bit higher in calories, but lots of protein and fiber.

  4. That looks amazing! I agree, thicker bread or smaller pickle chunks would stay together better. But who cares as long as it gets in your mouth
