Brown sugar milk tea at home 🙂

    Spent last week experimenting how to make brown sugar milk at home 😀 quite happy with the final results, so sharing it here

    # Brown sugar milk tea

    Recipe for 1 serving of 250 ml glass cup

    **Ingredients**

    Brown Sugar Syrup

    * 20 g dark brown sugar (ideally muscovado)
    * 30 ml (2 tbsps) water

    Brown sugar milk tea

    * 2-3 tablespoons of tapioca pearls
    * 200 ml fresh milk
    * Ice to fill glass

    ​

    **Instructions**

    1. Boil a pot of water, then add in the tapioca pearls to cook for around 6-8 minutes. Then, turn the heat to low and let it simmer for another 5 minutes. Remove from the hot water and set aside in an ice bath.
    2. In a pot, add the water and the brown sugar to it. As the water heats up, make sure to dissolve the brown sugar until no granules remain. Allow this to boil and then lower the heat to simmer for just 1 minute. You want the consistency to be slightly thick but still runny enough to drip off a spoon.
    3. Then, add the cooked tapioca pearls into the syrup to coat them.
    4. Using a spoon or ladle, gently pour tablespoons of the brown sugar syrup on the glass wall to create ‘tiger stripes’. Otherwise, you can also pour the brown sugar syrup to the bottom of the glass, and gently tilt the glass to allow the syrup to stain the sides of the glass.
    5. Next, add the tapioca pearls into of the glass, followed by ice. Pour milk into the glass, and top it off with some tapioca pearls. Enjoy the drink while cool!
