  1. I was so confused for a second. There’s a famous cycling ultra endurace race called Paris-Brest which has a strict time cutoff. I thought to myself, did this person eat so much pastry that it became impossible to finish Paris-Brest?
    At least I now know that there’s a pastry with the same name.

    I used this recipe recently too – took me two attempts to get the choux right, broke a creme pat, lost the will to live, and ended up using stabilized whipped cream instead of mousseline. It’s the kind of recipe that after a year or two you’ll forget what a mission it is and decide to make it again because it’s so pretty and delicious.
