
I made the jjajang Dong Won roppoki yesterday, and I found the instructions a little unclear, mostly I forgot to add the onions because I thought it was a topping at the end. I also cut the cooking time short because the noodles looked more than done already so my toppokki were a little underdone. I ate the noodles instead and left the toppokki for another time since the pack is really for two people anyway.
I am wondering if I reheated them the best way. I didn’t have a lot of sauce left and I decided they needed to simmer longer anyway so I added about a half cup of water to a small pot with them and simmered for a while before adding in soy sauce, gochujang, a small amount of brown sugar and a few drops of sesame oil. There is also some ham in there but I added that yesterday when I made it originally. I then let that simmer for a few minutes and the sauce got pretty thick and the cakes got really tender. I topped it with sesame seeds and some nori. My question is, is there a better way to reheat them, especially if they were already done and soft the first time, resimmering them seems like it would be bad but I don’t know how else to reheat them. Steam? Do people just not save leftover toppokki usually? Also wondering if my additions to make more sauce are good (I mean it tasted good but I mean like good as in tradtional) and what could I do instead if they don’t make sense in Korean cooking.
