I usually can’t stand the strong scent of ghee but the one I made has a scent like straight up Caramel. So heavenly, I’m ready to make a candle scent out of it 😂

I took 900g butter (2 blocks weighing 454g each) and added it to a large round bottom stainless steel pot. Turned the heat to HIGH and let the butter completely melt. Once its melted, add in 2 Tsp. of Semolina/Sooji (not the fine version) and add it in. Once the butter is bubbling turn the heat to LOW and let it simmer away for 20-30 minutes. Stir occasionally every 10 minutes. Once the milk solids have turned a dark golden, remove from heat and strain through a cheese cloth in a heatproof dish. Cover loosely and let it cool to room temperature. Transfer to a clean jar or food container and enjoy!

In all my 10 years of cooking, Butter and Ghee are the only two things I never made myself as it was always available in stores here in Ontario Canada. However, after the recent inflation the price of ghee has sky rocketed from $8-$10 to freaking $16.99 (regular price for 800g of ghee) and $14.99 (sale price for 800g of ghee) I decided to make it myself. I buy butter when its on sale for $4.99 or $5.49 and this batch cost me only $10 to make 800g. I regret not doing this sooner, my goodness, the homemade version is so superior to store bought.

Also I totally understand if someone doesn’t have the time or energy to make this at home. I also used to buy it from the store as I was dealing with severe health issues. I am 3 week post op from surgery and my health is slowly improving and I have the energy again to start a few from-scratch items at home.

    Ghee isn’t in anyone’s budget here to buy or make it,, we broke trying to survive with budget food ideas. This should be in some other sub because it’s a lot of great info and will help a lot of folks I’m sure. Maybe r/gourmetfoods
