Ingredients:
1 cup arugula, roughly chopped
1 cup black lentils, rinsed and drained
1/4 butternut squash, cut into small pieces, roasted
2 tbsp extra virgin olive oil
2/3 cup dried cranberries
1/2 bunch parsley, chopped
1 cup mint, chopped
1 cup pecans
100g vegan feta cheese, crumbled
1/2 pomegranate, seeds removed (optional)
Cranberry Vinaigrette:
2 tbsp extra virgin olive oil
2 tbsp red wine vinegar
1 tsp dijon mustard
1 tsp agave syrup or honey
1/2 cup cranberry juice
Sea salt
Black pepper
Instructions:
In a large bowl, combine arugula, black lentils, roasted butternut squash, dried cranberries, parsley, mint, pecans, vegan feta cheese, and pomegranate seeds (if using). In a small jar, whisk together olive oil, red wine vinegar, dijon mustard, agave syrup, cranberry juice, salt, and pepper to make the cranberry vinaigrette.
