High Protein Grinder Pasta Salad Meal Prep for the Week #glutenfree

I used chickpea pasta instead of regular pasta! My family does not do well on gluten so we try to avoid it. I love grinder sandwiches so thought this would give me the same flavor without the bread.

1/2 Jar Roasted Red Peppers
Half of a Red Onion
1/4 of Jar Banana Peppers
To Your Liking: Salami, Pepperoni, Soppressata
1 Cucumber or Pickles
1/2 Tomato
1 Can Cannellini Beans
1/4 Box Chickpea Elbow Pasta

Dressing:
1/2 Cup Olive Oil
1/4 Cup Red Wine Vinegar
1 Tsp Mustard
Dash of Balsamic
1 Tsp. Italian Blend Seasonings
