Made a larger recipe (about double, partially because I couldn’t get my head around how it wanted the peppers cut), swapped out the Italian sausage for lean ground turkey (~1.7 lbs), swapped out the rice for cauliflower rice (used two small frozen bags – about 20 oz total), and went heavy on the spices/added some anchovy paste, tomato paste, fennel, and crushed red pepper, and used spicy marinara instead of regular.

About 2,364 calories if you ate all 7 in one sitting, but they work out to around 337 calories a piece! The filling is great on its own, and could easily go over some spaghetti squash as an alternative.
