slow roasted lemon dill salmon, serves 3-4:
1 -1.2 lbs salmon
1/2 red onion, thinly sliced or 2 shallots
1 lemon, half sliced into rounds
1/4 cup dill, chopped
1/4 cup parsley, chopped
1/4 cup green olives, sliced
2 tbsp olive oil
2 cloves garlic, crushed
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes

1. Preheat the oven to 275 F
2. Add the thinly sliced onion to a baking dish with the sliced olives and 3-4 lemon slices
3. Place the salmon fillet over the top of the veggies then drizzle generously with olive oil. Sprinkle the salt, pepper and red pepper flakes over the dish, then spread the crushed garlic over the salmon fillet
4. Spread the chopped dill and parsley over everything, then squeeze the other half of the lemon over the salmon
5. Bake for about 30-35 minutes, until the salmon flakes easily. If using a fillet larger than 1.2 lbs, baking time may vary
6. Garnish with more lemon juice
