My mom was a great cook. She made simple meals that were delicious. And this (with a few modifications) is her Meatloaf Recipe.

Meatloaf Ingredients

3 lb Ground Beef
2 ¼ tsp Kosher Salt
2 tsp Granulated Garlic
1 tsp Ground Black Pepper
1 TBSP Smoked Paprika
½ White Onion Grated
½ medium Tomato Chopped
1 TBSP Worcestershire Sauce
1 Egg
½ -1 cup Bread Crumbs

Here’s one I haven’t done before my mom’s meatloaf now I’m going to change it slightly at the end when we put some things on top of it but this is basically what she would put in to make a meatloaf and I’m going to be doing it

In the oven but you could just as easily do this out on the grill just follow the same temperatures and really it’s about getting to your finished internal temperature which you know back in the day when my mom was making meatloaf it was just by time she would throw it in

The oven at 350° for about an hour and a half 2 hours and she would just kind of know when it was done we’re going to be aiming for an internal temperature of 160° and then it’s going to come out and rest for about 15 to 20 minutes but

Let’s get started building it now I’ve got 3 lbs of 8020 ground beef here to this I’m going to add half of a white onion that has been grated so I just took that half of an onion and got a box grater out graded it up didn’t get all

The liquid that comes off of that I just really want the pulp little bit of liquid but it’s mostly that onion pulp half of a tomato that’s been chopped up 2 and 1/4 TPO of kosher salt now back in the day my mom would just use table salt

Which is about half of the measurement of this but I’m using kosher salt so it’s 2 and a/4 Teaspoons 1 teaspoon of black pepper 2 teaspoons of granulated garlic or as she would call it garlic powder 1 tbspoon of smoked paprika she would just use regular paprika I’m using smoked paprika about a tablespoon of Worster sauce one egg and about a cup of breadcrumbs I’m

Going to start with about maybe a half to 3/4 of a cup and we can always add More now we get in here and mix break that egg up now I remember when my mom would make this you wouldn’t buy a prepackaged thing of ground beef you’d go to the butcher you’d get 3 lbs of ground chuck that’s what they called it all right that’s looking pretty good

We got a few tomato stragglers but they’ll make it in let’s get it into our meatloaf pan modern conveniences that Meatloaf pan with a lifter so you can lift it out and it’s got so grease drains away my mom didn’t have this going to press this in

Here not with a ton of force but just so we fill the corners and get sort of an even layer here it’ll settle itself a bit once it starts cooking but let’s get it helped along at the beginning now I said I was going to do something

Different at the end I’m going to put some things on top got some marinated red peppers here fire roasted red peppers peers and some pickled jalapenos I’m using the pickled jalapenos because they already have some moisture in them so hopefully they won’t dry out as

Much all right this is going to go into my preheated 350° oven and we’ll come back and check it in an hour and a half see how the temp is doing there’s our meatloaf it took an hour and 45 minutes in the oven I checked it an hour and a half it was

About 155 decided to give it about 15 more minutes checked it and we were at 159 close enough to That 160 so this is going to sit and rest for about 20 minutes then I’m going to transfer it so we can cut in and have a Taste so here is our meatloaf it’s done resting now my mom sometimes would brush ketchup or Barbe sauce on the meatloaf not every time I’m not going to do that this time I really want to taste the meatloaf like I said it’s almost exactly the way she made it I’ve just added a

Releases so much of the flavor into the meat you could get a similar effect by pureeing the onions but grating the onions is how my mom did it so I wanted to do it the same way turned out perfect and of course I added my little flare with the jalapenos and the

Marinated fire roasted peppers on top those jalapenos are darn good on there I don’t know that my mom would have loved that she wasn’t really into the Super spicy food but I think it’s a good addition to this and the base is really hers and I’m just loving [Laughter] it

(My stepmom wasn’t much of a cook for most of my childhood, so most of her “recipes” are best forgotten.)Like you, I’ve used diced/minced onions in mine, but I can see where the grated ones would add a different tilt. I’ll try it next time. Also, I’ve never found pickled jalapeños to have enough kick , so I roast/sweat/seed/dice mine to mix in. Not overwhelming heat, but a ton of flavor!

  7. That's very close to my recipe. Except, I use green and/or red bell peppers instead of tomatoes. I also like to top it with ketchup mixed with some brown sugar for some sweetness.
