They seem to have the tomatoes simmering in a pot. And then they fry up the onion and garlic in a separate pan and add it to the pot of tomatoes. Then the same method for the celery and carrots. And then the same for the meat.

  2. Imho the recipe is fine, of course re-interpreted for the Eastern taste but np. Kinda weird doing three different soffritti basically, instead of just one. A bit of flavour is lost every time the ingredient is dumped into the passata pot, which is unnecessary anyway. Eg. they brown the meat in a pan and then throw away the fond of the pan. They add wine to a pan but then lose the sugar from the bottom of the pan.

    Imho it would be faster -and better- to make a decent soffritto, adding the meat, deglaze with the wine and only then add the tomatoes.
