Is there a general name for this type of bread (bought from Carrefour in Rome)? The name on the label (red fried tongue?) doesn’t bring up any results. It’s a thin, olive oil bread with a tomato topping.

that looks like a reinterpretation of a lingua di pizza without mozzarella? I’d probably just call it a “pizzetta” but Romans might have their own name for stuff they tend to do that.
was it actually fried?
PS: “rossa” is just the normal way to say something is with tomato but no cheese in the context of pizza. rosso generally is used to mean tomato. tongue has to do with the elongated shape.
