
I could eat this every day. I’m doing keto plus intermittent fasting, two total meals per day.
Breakfast today was four eggs, with a splash of heavy cream, whisked, then gently scrambled, with 4 strips of bacon, and heated queso poured over the top, finished with Cholula hot sauce over the top.
Directions: over medium heat, coarsely dice then add 4 slices of diced Costco (already cooked) bacon to a large frying pan and cook until almost crispy.
Then add 2 tbsp of butter, and after it melts, pour in whisked eggs and keep everything moving in the pan until the eggs are almost cooked.
Simultaneously, microwave a couple of tablespoons of the Costco queso, stirring every 30 seconds.
When the eggs and bacon are almost done, transfer to a plate and pour queso over the top.
Splash hot sauce, as desired, and enjoy.
For me, super satiating and delicious for one of my two meals per day.
