Yea I’ve done it before. Won’t take as long and looks like you got the point which is good.
As mentioned it will cook faster. I like getting the flats for consistent thickness and even cooking plus I like the leaner meat. Could give both a try but I honestly think smaller pieces are easier to do and take up a lot less pellets and time.
Great price for SRF. I bought one of their briskets prior and it was worth the price
This must be a northern thing. I don’t recall ever seeing anything like this called a brisket in all my years of smoking food.
I did a 2lb flat the other day. Turned out delicious!
