I did two spatchcocked turkeys for Thanksgiving and both 12-pounders finished in around 90 minutes and were the best I ever had.
I had a pair of JA Henckels shears and actually bloodied my knuckles cutting the spines out. I previously had Oxo’s shears that had a flat handle and got a new pair like that, but a different brand, and it cut though a chicken backbone very easily.
