Summer is the time for fresh sweet corn. I thought I would make Fresh Corn Chowder, it’s good! You can easily change this into vegetarian.
Ingredients:
1 Tablespoon butter
3 strips of bacon
1 rib of celery
1 bay leaf
1/2 cup chopped onion
2 garlic cloves
2 Tablespoons flour
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
3 cups chicken broth
1 cup diced potato
1 cup cream or milk
5 ears of corn … about 2 and 1/2 cups
1/4 cup fresh parsley
salt/pepper to your taste

Let’s make some corn chowder we’ll start off with the tablespoon of butter and three slices of bacon what’s a little bit of better flavor in there and puts the bacon flavor and the better I’ll help speed up the rendering of the bacon so let’s get that started
Fry this up till crisp that bacon started to really render it’s fat it’s starting to get crispy I’m going to add celery and I’m going to add a bay leaf and a half of a good sized onion I like about a half a cup all the amounts of

Of chicken broth give this a good stir want to turn heat up to medium-high and bring this to a boil let’s come up to a boil I’m gonna add potato I am adding about a a cup of red skin potatoes then I diced up in about half inch dice and a
Cup of cream you use half-and-half or you could use whole milk I’m gonna turn it back down to medium I’m gonna let this cook until the potatoes become tender well it’s been going ten minutes and I checked the potatoes they’re soft now I’m going to add in the corn yeah
I’ll add all this now I used five ears of corn the corn was kind of like this size and if they were like real big like maybe that long I would probably use three ears corn I’d say it’s about two and a half three cups of corn and well let this gently
Simmer and stir it for ten more minutes now I’m gonna make some croutons gonna take some olive oil put it in my hot pan cubed up some fresh bread just going fry this bread in this olive oil till they’re lightly Brown I am on medium-high heat here and I don’t know
If you can hear him you’re starting to get crunchy it’s been about three minutes I can just take these back off the heat let them cool down bring this back on here turn this back to medium medium medium-low the corn has cooked for about ten minutes
Yeah I’ll go ahead and turn the heat off add in some fresh parsley or raid the plate there we are some corn chowder there some of our croutons on top which is optional of course had nice like I’m getting a little bit of green onion it’s really really good
I did add a little bit of salt and pepper to this I didn’t show you doesn’t need much salt perfect time of year to make this and thank you so much for watching
