BAJRA RISOTTO

Ingredients

2 tbsps olive oil
1 tbsp butter
1 tbsp chopped garlic
1 medium onion, chopped
2 cups boiled pearl millet (bajra)
Salt to taste
Crushed black peppercorns to taste
1 cup vegetable stock
2-3 tbsps fresh cream
2-3 fresh thyme sprigs + for garnish
2 tbsps parmesan cheese powder

Method

1. Heat olive oil and butter in a non-stick wok. Add garlic and sauté for 30 seconds.
2. Add onion and sauté till translucent.
3. Add pearl millet and mix well. Add salt, crushed black peppercorns and mix well.
4. Add vegetable stock, fresh cream and mix well. Cook for 2-3 minutes.
5. Add thyme, parmesan cheese powder and mix well. Cook for 2-3 minutes.
6. Transfer in a serving plate, sprinkle thyme and serve hot.
