Roast Beef Hand Pie – Leftover Beef Recipes – Southern Cooking Channel
Hey y’all, and welcome to Collard Valley Cooks! Ever wondered how to make your Beef Hand Pies recipes taste like mama made them? DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was an amazing cook as well, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it so easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh and no difficult-to-find or crazy ingredients! Just simple ingredients and really good food. I am a Southern girl born and raised in Collard Vally in Polk County Georgia. We went to church on Sunday, school during the week, the grocery store on Friday and that was our life. No vacations, no camping, just plain old southern country people.

All right we’re on hey y’all it’s Tam and Chris with collored Valley Hooks and we are going to make some good oldfashioned beef hand pies I made that beef stew and it was absolutely delicious I got to get a drink of tea and because it was delicious we got some
Left over I’m gonna fry it up some hen pies does that sound good you know hen pies I think were created for leftovers anyway it’s not something that people just I guess they make them but I think a lot of women and men had leftovers and
That’s what they used to make a hand pie okay so if you’ll come on over here I’m gonna start a little bit of oil that we’re going to fry them in and we’re going to fry these just like we would an apple fried pie except they’re going to have a good
Feeling a savory pie okay you come over to my well I guess yeah over here I got to dip some out now this is my beef stew that we had it’s got potato I had that on already I forgot it’s got potatoes and beef and you’re going to want mostly
Beef but it ain’t going to hurt for some vegetables to get in there yeah we’ll have to cut those potatoes up won’t we they’re pretty big yeah I’m I’m going to smash them with my Smasher is what I’m gonna do so what you want to do let me find my
Smasher is you want the liquid mostly out of them when you make your pies and I’m actually going to smash them a little bit okay my stew now it’ll be easier to smash once it warms up but you don’t want these potato in big hunks and you don’t really want your
Meat in big hunks either there’s a big potato so we’re just going to let this warm up right here and then we’re going to stuff our hand PES with them with it looks good to me I’m starving this smells so good to me this was the best I’m not kidding
This Dutch oven beef St y’all if you didn’t watch it you need to go back and watch it cuz it’s one of the best beef stew I’ve ever made I mean it really is that good I couldn’t believe how good it was so I’m going to turn this oil down on
Low we’re going to turn this down on low we’re going to make us some biscuit dough now some people make hand pies with different kinds of dough and I guess it’s according where you raised and what you got but we just always use a biscuit crust and it turns out really
Crunchy I use self rising flour white lily and I’m going to use a cup of self rising flour I’m going to use a little bit of Grease not a lot and we’re just going to use milk today because some of y’all got buttermilk and some of y’all don’t and I
Told Chris I said not everybody has buttermilk and I this is for leftovers mostly and I want them to be able to make these so if you’ve got something that’s left over and you want to make a Savory pile of it you can and then it’s you know you’ve revamp
It and everybody’s going to love it too so I’m just taking a blending Fork blending that in there and we’re just going to pour some milk in it until it’s good and together now if you was making these for a whole big family you would make more
Of them but it’s just me and Chris today so but I am going over to Maz today I may take her one with me the great thing about these you can put them in lunches if you’re working outside away from the house you can put them in a lunch
Box so they’re handy dandy Little Things what if you were fishing well if you was fishing too yeah forgot about you fishing didn’t I huh or let’s put some flour in our sier so you just add enough milk to bind it together that’s all you need now
We’re going to get some flour out on the counter and get this dough out on the counter and it’s kind of dry and that’s the way you want it it’s not like a biscuit because you’re you’re going to be rolling this out and you want it kind of stiff
Okay to make a hand pie out of because you got to be able to work with it so I’m going to put just a little bit more flour in it and then we’re going to roll it out I got a new rolling pen for Christmas everybody’s asking about the
Weather we’re cold but we’re only in the 30s and 40s yeah I know 20s tonight I know a lot of y’all are snowed in oh yeah and me and Chris are not snowed in I get to go to maze today and today is the day we spend together while Chris babysits the
Dogs so you’re going to want to roll this pretty thin now you don’t want it paper thin or your steel will go through It that’s about right so it should be hold itself together when you pick it up if it don’t then put a little bit more flour in it until it does it’s just like a dumpling same way if you’re making a dumpling if you pick that up and you’re making dumplings and
It falls down then you better put a little bit more flour in it now you’re going to take the bottom of your sifter this is just another reason why y’all need to go online and buy a sifter off my website because you can cut your hand pies out with the bottom of it
And I’m gonna tell you you just need these oldfashioned kind of septer because they work the best they really do I bought a fancy one from Walmart and got home and it wouldn’t sift nothing and it’s not Walmart’s fault it just was you know not a good
Senter but you’re going to see this will make quite a few hand pies this just this dough one cup of dough or one cup of flour dough I’m sorry for y’all that are snowed in but if you’re snowed in and you’ve made stew this week look you can go in there and make
This today and I’m GNA tell you when you use H self-rising flour to make your crust with it is so crunchy and delicious and let me tell tell you this too you can freeze these you can freeze these I would wrap them in foil okay and put them in the
Freezer and then when you get ready to have one get it out and put it on a bakon dish or in your air fryer warm it up and it’ll be nice and crunchy you get it out of the foil I don’t know why I just think they are better if you put
Them in full all right here we go there’s one so once you get them cut out you’re going to roll them just a little bit more to fill them this is kind of want to stick I need to put a little flow back on my pastry flour it a little
Bit all right we’re going to do three I’m going to show you how to do three okay I’m mostly using meat and it ain’t going to hurt to get a vegetable in there or two if your kids are picky leave the vegetables out of it
Okay so if you want this stew recipe all you got to do now y’all I haven’t told y’all um enough for y’all to know but I’m putting the recipes on the actual description post now I mean I hadn’t got them all done that way but all my new
Ones are that way and the ones I’ve got to review are that way so if you want uh the recipe you don’t have to go to the website and get it but the great thing about going to the website is you can print it from the website instead of
Having to copy it and write it down okay it’s free to print from the website all right so you’re going to take these and today since this is beef um I’m going to seal them a little bit before I put them together this is a little bit of
Shortening now you can use water ain’t GNA hurt nothing just something help it stick together yeah you can just wet your finger I can smell that oil over there it’s ready okay now let me get a fork sometimes I forget to lay out stuff my hands have got flour on them so
I’m not going to touch that drawer close it back you got to be careful I probably got these two full y’all but I want them as full as I can get them that one’s already tore yeah they going to tear they going to tear a little bit because I feel them so
Full now this one W cuz it was big so y’all just be careful that’s really too much right there cuz the Fuller you feel them harder they going to be to close that’s going to mess your oil up too because they’ll have all that meat stuff in
It you think yeah if it gets that stuff in then it’ll break down real fast well I’ll do these last then and do two more I I rolled them out too a little too thin and put too much stuff in them here let me just put these over there
I’ll fry these last I’ll do better okay so you just take your forwork and go around the Edge well putop on it that one to don’t roll it too too thin I guess it’s a little bit different than my Apple Fried Pies I’m used to doing the apples more but I mean if you can’t put much feeling then I’m what good are
Right so we’ll try to put more in this one I’m G get this piece of meat and put it in this one and I’m only going to fry three for y’all just because that’s really all you need for the tutorial and me and Chris can eat them and then I’ll make M these last couple that we
Did I just can’t help but want to put a lot of in them I just can’t help it just don’t here let me wet my fingers this time a little water okay I put too much in that one too you get out of there we might get a pie today I’m a
From we going to eat them y’all ready to do some frying all right I’m sure it’s plenty hot I’m just going to put a little piece of dough in it it’s pretty hot now when I do fried apple pies I actually put in um a little butter but I’m not doing
That today for these I usually put the round side towards the outside of the skillet this is a longer one there you go y’all keep an eye on those while I use these last two what I might do is leave them fat let’s leave some fat like this and just
Because they’ll wrap a lot easier leaving them instead of rolling them again they’ll be thicker if you don’t do the second um roll out they going to be a lot thicker then I’m going to show you the difference well I broke that one too forget it I
Think I would have to make this a lot tougher though you could just make the circles Big make them bigger yeah I could here let me get my hands rined instead of using the uh what do you call it the fter yeah but you’d have to find
A bowl or something to make make them even bigger yeah to cut them out with I guess you just don’t have to stuff them as much nope okay let’s see if they’re getting Brown let me get something let’s see first one we put in was this one I’m turning it up there it
Goes now I tell people when they make these you don’t need to have it so hot that um the dough don’t get done like if they get in there and it’s really really hot they’ll turn so Brown so fast that the dough doesn’t get done and you don’t want it to be uh
Doughy so who all we got on here today Chris y’all tell us if you got snow y’all have snow today I know Tennessee and North Carolina and all up through there’s got snow it’s crazy how much snow there is out there this year even New York got snow they said
They hadn’t got snow and I can’t remember what the news lady said I want to say did what yeah I’m serious New York City I’m sure they’ had no no no she said on the news y’all tell me if this is true okay she said on the news
That New York City on the Weather Channel had not got snow a snow in the city of New York and I I want to say around 600 days y’all tell me if that’s true I thought that was crazy sounded like know that yeah or I’m turning it up some
More I’m gonna flip these over uh oh well I need two spatulas gotta walk around Daddy yeah I really don’t think I got my dough bowed out thick enough you know what I mean hard enough like a dumpling I mean it didn’t tear when I
Picked it up but it was right on the verge of it so just remember the tougher your dough the tougher it’s going to be in the skill it as whale so you think you should have needed it some more yeah Yeah and the more of them um yeah cuz even the fat part wants to tear M and I did stuff on my l they getting Brown yeah looking good all you would have to do y’all let me tell them this put a little bit more flour in your
Dough uhuh and then when you cut them out you go ahead and use this but cut them out thicker so you can roll them a little bit yeah that makesense yeah I’m not an expert on frying Steve but fried I’m an expert on Fried Pies I can tell you my Fried Pies are
Pretty they turn out pretty every time and I’m hungry hungry when you get them out you’re going to want to put them on some paper towels long enough for them just to cool down a minute you don’t want them sit there a long time you don’t want them to sweat or
Anything I’m just looking at them to make sure they’re brown enough well you little ster look good yeah they’ll tastes good I guarantee you that they all tastes good and all this is in here fried dumplings m you can actually just fry your dough and put some glaze on it like
Donuts okay I’m going to set these I guess where I got stuff everywhere I’ll set them right here let me cut this off or you gonna put those in there oh I’m going R do these y’all sorry but I kind of you know made a mess out of some of them
So going cut off cut them out thicker the next time roll them out and try some more for us because I want to take something to make but now this is enough for our lunch and you can tell a little bit of Stew goes a
Long way because it don’t take a lot to stuff them okay because I’ve got three right here and those are pretty big yeah they’re big they’re don’t fill me if I ate that that’s more than I need for lunch and then I got four over here that I messed
Up that’s what happens when you’re live see the real stuff all right y’all come on over here and we’ll open one up that’s how it looks it’s hot so we’re GNA let it cool a second does anybody say anything Chris not right this second no no y’all got
Any questions while I’m waiting on this to cool a second somebody ask if they could use pie crust and yes yes you can use pie crust you sure can really good I don’t want to get burnt don’t get burnt oh my gosh so good it’s like eating a fried biscuit with your
Stew it’s in the 30s down here today some people are asking what the temperature is y’all it’s delicious so since you got to make them a little thicker and tougher you just need to make sure that you don’t put them in too hot of Grease okay so that your go gets
Done I’m going to redo the I’m G to do this again for YouTube no not YouTube Facebook so I’ve learned a little bit of a lesson with you guys on Facebook no I mean YouTube gosh I’m getting old I can’t think right I’ve learned a little bit of a
Lesson live with YouTube I should have done Facebook first because they you know they they just like rawal footage better than YouTube does but anyway y’all have a wonderful day and we thank you for watching our live video making some beef hand pies love you bye

I think the pies look delicious 😋
😋🥰
I really like that white, oval dish you had the leftover stew stored in as you were dippin' it out into the hot pan. Is that from some place other than Amazon? I looked in your store but was not able to find it.
Thanks for sharing this video. 👍🏻 Hand pies are a favorite in our house.
Nice unique recipe. I've made your biscuit recipe with regular milk and I've made it with almond milk. It comes out great with either! Bigger circles would make your life easier. Actually, any squares work just as well too.
Looks good I love beef stew I'll make them tfs God bless
The fried pies look delicious! Always enjoy your videos ! God bless!

You are looking good, Tammy!
Momma said we’d have days like this! I bet they were delicious, but I’ve never wanted to jump in and help someone more than I did you. 😂 Happy cooking, Ms. Tammy!
Hi Tammy and Chris from Akron, Ohio!! We’re at 15 degrees tight now. We’ve been in the low teens and the single digits all this week. Try using the plastic lid off of a big coffee can to cut out some bigger fry pies. It does work!! God bless you two sweet people!! Your fry pies look really good. I have got to try making these!! 🥰
This is a great idea.. I have some leftover stew so I may do this .. looks wonderful TamTam .. thank u so much sweetie ❤❤
❤❤❤
Hi from New York and it was 18° when I woke up this morning very windy very cold. Love your fried pies no matter what’s inside them.
looks good gott make some
Dr. Gundry explained the youngsters don't like vegetables because nature made them not need them till they get older. But all the children usually love fruits.
I love meat pies but have never tried making them but you make it look easy will have to give it a try❤❤
Here in Virginia got about 4 to 5 inches of snow
Hello, Tammy. I enjoy your videos. When I first discovered your channel, I went back to your earliest episodes, and binge-watched all the way to present day. I love making meat pies of all kinds, and one thing I have found is that the filling needs to be cold before you add it to the dough. It also helps if any pieces and chunks are quite small. Doing it that way lets me use regular pie dough, or biscuit dough, or even a yeast dough.
Those look so good! And such a great idea to use up beef stew leftovers. We don’t keep buttermilk around but I found buttermilk in powder form. Bless you and Chris
They looks delicious ❤❤❤
Never thought about doing that with leftover stew that’s really a good idea
it's pretty, but I don't really like the Pioneer Woman rolling pin. It just doesn't seem to do the job for your without a little work.
P S- Chris has good advice
You can MAKE your own buttermilk, by adding a little lemon juice. (We always have one of those prepared, “lemon-shaped”, lemon juice containers in our fridge.) You can ALSO buy a can of buttermilk powder, and use it “as needed”. (I keep mine in the fridge as well!!)
Hand pies, or “pasties”, (PAST eez), are a staple of the upper Midwest, U.S.!!
They purportedly originated from Cornwall, England, and those people mostly immigrated to the Michigan area of the U.S., starting around the 1840’s. They used small chunks of beef, “swede”, (turnips), or rutabagas, potatoes, onions, salt and pepper. (It’s considered “sacrilege” to put carrots in “Cornish Pasty’s”!!) The ratio of beef to veg is 12 1/2% meat to 25% veg. The ingredients were ALL RAW, and were “slow baked”, with several vent cuts, until golden brown; the insides tender. The dough, was typically made with flour, water, and lard. They were large, half-moon shaped, with twisted or tightly crimped edges. As in their origins, they were made by the Mother’s or Wive’s of the local miners. Pasty’s or “Cornish Pasty’s”, have been traced as far back as the mid 1100’s!! 😮 Housewives and mother’s would pack them in the lunchboxes of their “tin miner” sons and/or husbands. There are many variations, from Scotland across Western Europe.
Nowadays, they are made to personal preference. Unless you’re a “purist!!” 🤭
BTW, you fried those 4min., on the first side, and 3 1/2min., on the stuffed side. I would have LIGHTLY salted the tops, right out of the grease. ❤️
This is a wonderful idea for leftover beef stew! Need new things to make
Hello again Miss Tammy and Chris 👋 Miss Tammy you are looking wonderful. Have you lost weight.? You really do look good. Do you have a secret recipe? I need to lose weight.
Those hand pies look so delicious. Everything you make looks delicious. Thank you 😊
