I’ve been making variations of this sandwich since I was a teenager. Sometimes the breaded item is chicken or veal or eggplant or zucchini but it’s always fresh mozzarella, roasted red pepper and whole basil leaves laid on top. Dressed with balsamic vinaigrette and a little extra drizzle of olive oil.

This is one of my favorites.
