Made my favorite loaf, which is a loaf with Kalamata olives, herbes des provence, and lemon zest. Sometimes I switch up the kinds of flour I use. But this one was just straight up:

100g starter
350g water
500g King Arthur white bread flour
12g salt
A full jar of chopped Kalamata olives, measure with your heart
1.5 teaspoons herbes des provence
Lemon zest, I do the zest of about half the lemon

And I’ve been experimenting with new scoring patterns for my oblong loaves, I thought this one was super fun! If I try it again, I’m gonna use a scissor to cut underneath the surface of the loaf along that main S curve to really try to get like a yin yang ear.

I accidentally fell asleep last night so I was afraid that I over proofed the dough. But the crumb isn’t too bad! Forgot to take a crumb shot, so the closest I’ve got is my slice shot. 😂
