Salmon, broccoli and mashed cauliflower

    Salmon:

    1 salmon fillet— wiped dry

    1 tsp minced garlic

    1 tbsp mayonnaise

    1 tbsp grated Parmesan

    1 tsp olive oil, or avocado oil

    Instructions:

    Preheat oven to 375. Line pan with parchment paper. Coat top of salmon fillet with garlic and mayo. Sprinkle Parmesan cheese on top of those ingredients. Lastly, drizzle oil on top of the cheese. Bake for 10-15 minutes, or until salmon reaches an internal temperature of at least 145 degrees F.

    Notes:

    Salmon must be dried, and oil must be added last— or ingredients will slide off

    Feel free to turn the broiler on for a few minutes at the end of baking time, but not absolutely necessary.

    Mashed cauliflower:

    1 cup cauliflower florets

    1 tbsp heavy whipping cream

    1 tbsp sour cream

    1 tbsp butter

    1 tsp chicken bouillon powder

    Instructions:

    Bake or steam cauliflower until soft. If baking, coat with about a tsp of oil first, and bake for 20-25 mins at 375 degrees F. While cauliflower is softening— add other ingredients to blender (I use a nutribullet). When cauliflower is ready, add it to the blender and blend everything together until it’s a consistency you enjoy.

    Broccoli:

    1 cup broccoli florets

    1 tsp oil

    Freshly grated Parmesan

    Instructions:

    Combine ingredients and bake at 375 degrees F for 20-25 minutes. I usually bake with the cauliflower to save some time. When fresh out of the oven— plate and top with freshly grated Parmesan.
