Welcome back to Catherine’s plates where it’s always simple easy and delicious in my kitchen today I am going to be bringing you a broccoli and cheddar soup simple easy and very delicious now this recipe comes from my cookbook which is Catherine’s plates making home cooking simple easy and delicious there are over
75 recipes in this book ok I’ll have it linked down below in my description box if you want to check out the overview of it ok so I am working on a volume 2 I’m super excited about that because in the past year I’ve had a lot of recipes come
Out on my channel that I did for you guys so I’m going to compile them into another cookbook ok broccoli and cheddar soup doesn’t that sound comforting warm delicious full of flavor let me bring you over here and show you the ingredients of them show you how easy it
Is just to put this all together ok guys here is the recipe for my broccoli and cheddar soup that comes out of my cookbook and here’s all the ingredients so what you’re going to need 2 heads of broccoli we’re going to be chopping that up 4 tablespoons of butter
Quarter cup of the flour that’s going to make kind of a roof to help thicken the soup got half an onion that I’m going to dice up 2 cups of heavy cream or you can use half and half which I have right here 2 cups of chicken stock now I’m
Going to shred up some carrots now for seasonings I’m going to be using some salt about 2 teaspoons pepper 1 teaspoon I’ve got some ground cumin well that’s going to add some nice warmth to it we’re going to use 1/4 teaspoon and then I’ve got paprika another quarter
Teaspoon and you can’t do a broccoli and cheddar soup without the sharp cheddar cheese 2 cups finely grate okay I’ve got my big soup pot going on here let’s start making this soup alright so I’m going to go ahead now and get my broccoli ready now these are the
Broccoli on the stock so what I’m gonna do is just go in and cut off little florets like that there and if you have a big floor it you can just cut it in half whatever size you want for your soup so these are nice bite-sized pieces
So people can manage it when they eat the soup take the onion now cut off the ends and I’m gonna do just a fast chop on this so I’m gonna get my chopper out today to peel off the outer layer I’m gonna put both halves of the onion into
My soup so I’m gonna go ahead and do both you know I’m just roughly chopping it into a little bit bigger than a dice go ahead and add that to my bowl here a carrot cut off the ends that’s it for chopping up vegetables so in a large
Soup pot that I have here we’re gonna go ahead and put it on medium-high and then we want to start adding at my 4 tablespoons of the butter and start melting that down we’re fixing to make some magic happen here you guys you know it broccoli and cheddar soup you’re
Gonna see it come together with some amazing flavors I’m super excited and the easiest thing is sometimes to do when you’re making soup is just to have your vegetables already chopped up before you start that way you could just boom boom boom you know done okay the
Butter is ready now for me to add my carrots and onions I’m gonna saute these down for about 2 minutes now I like to flavor the layers so with my onions and carrots I’m just going to add a little bit of salt and some pepper and I’m gonna let them do their thing
I’m glad this is a fast food yeah it’s gonna come together pretty good alright so all we’re doing is looking for these to get nice and soft the carrots in there is gonna give this soup a really nice color to offset against the green of the broccoli it’s
Gonna get in and start thickening that up now I’ve got a quarter cup of flour gonna put in I’m gonna stir this around for three minutes until we cook that rawness out of the flour and then just keep moving it around okay at this point now we’re gonna go ahead and start
Adding my chicken broth two cups it was slowly pour in one and then just start scraping the bottom getting it all incorporated oh my gosh every layer is gonna smell so delicious at this point right I’m gonna add my second cup [Applause] and [Applause] go ahead and add our heavy cream all
Right like I said if you don’t have heavy cream you can use half and half which I’m going to be using because you know that’s what I have and you can certainly substitute that around here get the spelt right there all right we’re gonna go ahead now and
Season two teaspoons of salt we got some broccoli coming soon so I wanna make sure that we have a good flavor in there one teaspoon of pepper alright I’m gonna put a quarter teaspoon of some cumin and a quarter teaspoon of some paprika oh yeah you know what this is going to do
Alright let’s give that a stir while we’re stirring we’re gonna put up our burner on to about medium-high okay we’re going to stir all of these seasonings in and what we’re going to do is bring the heat up because we want to bring this up to a simmer [Applause]
It’s a nice boil here what we’re going to do is add our broccoli we do have that fresh broccoli going in all right go ahead can you all see how that’s looking oh my gosh [Applause] so what we’re looking to do is cook this soup for about ten to fifteen minutes
Only until we get the desired texture that we want from the broccoli so if you want it to be a little crisper then you know leave it at the ten minute mark if you want it a little more softer then you know add some more time to it just
Check it but it’s sit for a minute and stir let it sit for a minute and stir is it time to fold this up yet when you reach the consistency that you want your broccoli to be turn off your burner you know broccoli cheddar soup it’s not that
Unless you were putting some cheddar cheese in it shredded sharp cheddar cheese to give it a really good flavor all right we’ll sprinkle this in Y’all if this was any easier you would probably had to opened a can of soup and heat it up you saw how simple this was I’m just going to just lightly mix that cheese in all we wanted to do is just kind of melt it in there and the last
Thing we’re gonna do is get a bowl Cheesy comforting delicious I’ll bet look at that mmm I cooked the broccoli the way I wondered it mmm so there’s a little texture to it which is perfect mmm oh my gosh I can see her neat this whole bowl which I will okay y’all don’t forget it came from my cookbook one of

Looks good but this isn't cheddar broccoli soup it's cream of broccoli soup. Cheddar is with a cheese and it's the color of cheese. But this would taste good too. This is a FYI statement
