Here’s my recipe for Italian rabbit stew, or coniglio alla cacciatora in Italian. I’m braising two rabbit legs in white wine with shallots, garlic, carrots, cherry tomatoes and green olives, plus typical Mediterranean herbs like thyme and fresh rosemary sprigs to create the authentic coniglio alla cacciatora flavors. I simply love this Italian rabbit stew. For sure, rabbit is one of my favorite mammals.

  1. I’ve only ever had rabbits stew where the rabbit is shredded and the stew is a lot more soupy. This looks amazing. I can’t wait to try it.
