Potatoes on sale this week. Not a problem, I love all forms and varieties of potatoes. Just scoop out the inside and add stuff. I use whatever is in my fridge. Today it was fresh garlic, lemon juice, parsley, Greek yogurt, a bit of feta, cheddar and a splash of heavy cream. It’s very forgiving and a nice way to use up bits and bobs in your fridge. Bake or air fry around 400F for 20 min

    That’s a lot of potatoes. You’ll probably have leftovers after your refrigerate them and take them out to reheat them the next day. What will you call them then triple baked potatoes?

    You don’t need more! Yum. And potatoes are a reasonable budget food even when not on sale. The skin gets crispy (rib in oil before baking) and I understand that’s where the greatest amount of fiber and Vitamins reside! May I say cheese? 😄
