Recipe was very simple (variation on PlantYou spinach pesto recipe) – blend basil/spinach/garlic/tomato/lemon juice then add cashews and blend some more, salt to taste. Mix with boiled pasta (I added 1 tsp oil to prevent sticking). Ingredients listed in the second image made 4 hearty servings.

I ate with roasted potatoes, green beans and cherry tomatoes so my full dinner was 450 calories, but I was shocked by how full I was (normally I only get this full with a 600-700kcal meal). I can’t see myself ever eating regular pasta again, Carbe Diem penne tasted identical and was half the calories.
